Job Responsibilities: Oversee the operation of the stewarding function including kitchen sanitation, food service ware sanitation, food and beverage equipment processing, inventory and maintenance. Responsible for the performance and goal setting of the stewarding staff, including direct supervision of the Asst. Exec Steward. Develop and implement daily procedures, performance standards and audit functions that increase operational efficiency. Maintain established par levels of supplies. Develop a replacement budget and schedule to ensure that guest service is uninterrupted. Ensure operations are in compliance with all regulatory Food Service health codes. Coordinate quarterly equipment inventories. Implement policies and procedures to control loss from damage or other means to maximize equipment usage. Manage the cost control of labor, equipment and chemicals. Ensure products are stored and distributed according to E.P.A., OSHA, and Health department guidelines. Maintain schedules and operational plans that support both front and back of house operations. Perform other duties as assigned.

| Education, training, experience: |
Education: Bachelor's degree in Hospitality or a related Business discipline preferred. Experience: Minimum five years stewarding experience with a minimum of three years stewarding management required; experience in a major hotel convention center of 1000+ rooms preferred. Basic computer skills required.
